Sweet corn pulav is a flavorful variety rice prepared with sweet corn. Soya cHunks adds some protein to the rice. This is perfect for lunch box. The flavorful rice goes well wit raita/ gravy. Quick rice which can be prepared with 30 minutes.

Ingredients
  • Basmati Rice - ¾ cup soaked and drained
  • Corn - ¾ cup
  • Mini soya chunks - 3 tbsp
  • Salt - as needed
  • Water - 2 cup
  • To temper:
  • Cardamom Pods - 2
  • Cinnamon Stick - 2 inch
  • Clove - 1
  • To grind:
  • Oil - 1 tsp
  • Onion - 1
  • Green chilli - 1
  • Garlic pods - 2
  • Ginger - 1 inch
  • Coconut (Fresh/Frozen) - 3 tbsp
  • Poppy seeds - ⅛ tsp
  • Fennel Seed powder - ⅛ tsp
Method
  1. Soak rice in warm water for 15 minutes and drain water
  2. Microwave mini soya chunks for 2 minutes with ¼ cup of water. Let it cool, squeeze the water well
  3. Sprinkle some water to the fresh corn and defrost in microwave for a minute
  4. Add 1 tsp oil to the pan, when oil is hot add fennel seeds, poppy seeds and let it splutter
  5. Add garlic, ginger and sauté
  6. Add onion and cook till onion becomes translucent
  7. Add coconut and give the quick stir. Let it cool
  8. Grind them into fine paste without adding water
  9. Add 1 tbsp oil in a heavy bottomed pan. When the oil is hot, add whole spices and cook for 30 seconds
  10. Add the ground paste and cook for 2-3 minutes
  11. Add the soya chunks and sauté
  12. Add sweet corn and sauté for a minute
  13. Add rice and sauté for a minute
  14. Add water, close the lid and cook for 12 - 15 minutes or till it is done. Fluff and serve with gravy/raita
Notes
1. Rice can be cooked in instant pot/ pressure cooker
2. Fried onions can be added to garnish
3. Soya chunks is optional. Fried Paneer can be used instead. Fry paneer separately and add it after cooking rice
4. Ginger garlic paste can be used instead of whole ginger and garlic
5. If you are using regular soya chunks cooking time may vary
6. Squeeze the water in soya well
7. Bay leaves can be used while tempering. I forgot
8. Adjust the green chili according to your spice
9. Paste can be ground without waiting. In that case add extra oil and sauté till raw smell goes off
