Ingredients
  • Brinjal - 6
  • Fresh /Frozen Drumstick - 15 (I used frozen)
  • Onion - ½
  • Tomato - 1
  • Garlic - 1 tbsp
  • Ginger - 1 tsp
  • Tamarind extract - ¼ tsp
  • Turmeric powder - ¼ tsp
  • Chilli powder - 1 tsp
  • Salt - as needed
  • Sugar - pinch
  • Oil - 1 tsp
  • To temper :
  • Sesame oil - ½ tbsp
  • Mustard seeds - ¼ tsp
  • Channa dal - ½ tsp
  • Curry leaves - few
  • Hing - generous pinch
Method
  1. Add oil to the pan and when the oil is hot add all the ingredients listed under “to temper”; let it splutter
  2. Add onion and cook for 2 minutes
  3. Add salt and cook till onions are translucent
  4. Add tomatoes, ginger and garlic; cook till tomatoes turns mushy
  5. Add turmeric powder, chilli powder and cook for a minute
  6. Add tamarind extract and mix well
  7. Add brinjal and drumstick; mix well
  8. Add ½ cup of water and mix well. Cover and cook for 7-8 minutes till the veggies are cooked; Stirring in between
  9. Sprinkle some water if required
  10. Add sugar and 1 tsp of oil; cook for a minutes and switch off
Notes
1. Coconut, fennel seeds, poppy seeds can be grind into a paste and added for extra flavour
2. Cooking time may vary depending on the brinjal and drumstick. sprinkle some water if required
3. if you are using regulare tamarind extract add around 3 tbsp dilated + water
