Saffron Cookies - Eggless

Rich and Flavorful cookies with saffron. Saffron cookies are addictive tea time snacks. Kids can't say no to this Crunchy delight. Egg-less/ Eggfree cookies tastes delicious.

Ingredients

  • All-purpose-flour- 1 cup + 1/2 cup
  • Melted butter / Ghee - 1/2 cup
  • Sugar - 2/3 cup
  • Saffron - 1/4 tsp
  • Milk - 2 tablespoon + 1/2 tbsp
  • Cardamom pods - 5
  • Salt - pinch

Instructions

  • Preheat the oven to 350 degree Fahrenheit and place parchment paper in a cookie tray and grease it with cooking spray
  • In a mixie jar add milk, saffron and cardamom seed; pulse once
  • Add sugar and grind once
  • In a wide bowl add all -purpose - flour and salt. Add the ground mixture, melted butter and mix well
  • I added 1/2 tablespoon of milk to form a dough
  • Take a small amount of dough in cookie scoop and place it in tray. Gently roll and press the cookie
  • Bake it for 12 - 15 minutes, cool and enjoy

Notes

  1. I have tried the same recipe with wheat flour but saffron flavor is predominant with All-purpose-flour
  2. Adjust the sugar according to your taste
  3. Castor sugar can be used instead of granulated sugar. Avoid grinding the sugar if you are using powdered sugar
  4.  Saffron can be soaked in warm milk, instead of pulsing it with milk
  5. Almond/pistachio/cashew can be added for extra crunch and richness
  6. Cardamom powder can be used instead of seeds
  7.  If you prefer to shape the cookies. Leave the dough for an hour and roll it using roller. Cut into desired shape
  8.  Brown butter can be used instead of melted butter
  9. Cinnamon powder, vanilla etxract, almond extract, nutmeg etc. can be added for extra flavour
  10. +/- teaspoon of milk might be required for the dough
