Mushroom pepper fry

Ingredients

To crush

  • 1/2 tablespoon pepper
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon coriander seeds
  • 1 teaspoon fennel seeds

to temper

  • 1 tablespoon peanut oil
  • 1/4 teaspoon mustard seeds
  • curry leaves few

  • 250 grams mushroom
  • 1/2 teaspoon ginger garlic paste
  • 1/4 teaspoon turmeric powder
  • Required salt
  • 1/4 teaspoon Kashmiri chilli powder
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ghee

Instructions

  • First, crush the ingredients under “to crush” and keep them aside
  • Add oil to a wide heavy bottomed pan and heat
  • When the oil turns hot add mustard seeds and curry leaves; splutter
  • Add ginger garlic paste; mix well and saute
  • Furthermore, add mushrooms and give a quick mix
  • Add turmeric powder; mix well
  • Furthermore, add chilli powder and salt; mix well and cook till moisture evaporates and the mushroom cooked well
  • Add 2 teaspoon of ground powder; mix well
  • Furthermore, add sesame oil; quickly mix
  • Add remaining powder or according to your taste
  • Simmer and saute for 3 minutes
  • Finally, add ghee; mix well and turn off the stove

Notes

  1. avoid fine chopping, mushroom cooks to perfect texture when mushrooms are halved. You can also roughly chop them but avoid fine chopping
  2. Always wash mushrooms in a colander. drain the water well then prepare the mushroom roast
  3. you can cook mushroom for 0 minute but mushrooms cooked in an open pan turns to the perfect texture
  4. Skip mortar & pestle and pulse powder in mixie but mortar & pestle gives the perfect texture
  5. To balance pepper spice I prefer adding little ghee. Yes, you can use vegan butter or skip ghee
  6. you can use black pepper powder but freshly crushed pepper gives the best taste and texture.

Variations for south Indian style mushroom pepper fry

  1. Saute onion, and capsicum and add extra flavor
  2. cumin powder, coriander powder, and pepper powder can be used instead of fresh spice powder
  3. Add tomatoes and make a semi-dry curry
  4. skip ghee and make vegan
