Instant Mango Shrikand | Instant Amrakhand

Mango Shrikand is a quick dessert prepared with mangoes and thick curd. Traditional shrikand is prepared with hung curd, here is the instant version using sour cream. Tasty dessert can be prepared within 5 minutes. No whisking - with just a mixie blender, this is one of simplest dessert with mangoes.

Ingredients

  • Mango - 3/4 cup peeled and roughly chopped
  • Sour cream - 1 cup + 1/4 cup
  • Cardamom powder - 1/4 tsp
  • Sugar - 3 tbsp
  • Saffron - 1/8 tsp
  • Milk - 1 tbsp

Instructions

  • Add saffron to warm milk and set aside, till the milk comes to room temperature
  • In a mixie jar add mangoes, cardamom powder, saffron milk and blend till the mango becomes a smooth paste
  • Add sour cream to the jar, mix well with a spoon with a spoon and pulse it once. Shrikand is ready

Notes

  1.  If you are planning to make the dessert advance and refrigerate add triple the quality of sour cream compared to mango pulp
  2.  Mango pulp can also be used instead of fresh mangoes
  3. Adjust sugar according to your desire also depending on the mango sweetness
  4. Any seasonal fruit can be used for the Shrikand preparation
  5. After adding sour cream just pulse one or two time to mix well. Avoid over blending
  6. Use room temperature milk for blending with sour cream to avoid curdling
  7. Plain shrikand can be made without adding mangoes
  8. Food color can be added for bright yellow
  9. If you are using regular curd hung in Muslin cloth for 6 hours and drain
  10. Use whole fat sour cream. avoid low fat
  11. Greek yogurt can be used instead of sour cream. Mango flavored whole fat Greek yogurt can be used to enhance the flavour
  12.  We personally prefer white sugar for this sweet. If you prefer use brown sugar or jaggery
