Orange Pulav | Orange Pilaf | Orange Rice

Aromatic Orange Pulav with fresh orange juice, mint leaves, peas and spices. If you are a big fan of citrus flavor this Pilaf is perfect for your taste buds. This rice is great for kids and adults as a lunch box special. Rice cooked in orange juice gives nice flavor to the pulav

Ingredients

  • Rice - 1/2 cup
  • Orange Juice - 1/2 cup
  • Saffron - 1/8 tsp
  • Water - 1/2 cup
  • Onion - 1 medium,thinly sliced
  • Ginger & Garlic paste - 1 tsp
  • Green chilli - 1 big, slit
  • Fresh/ Frozen Peas - 1/4 cup
  • Mint – few
  • Salt – as needed
  • Oil - 1/2 tbsp
  • Bay leaves – 1
  • Cinnamon - 1/4 stick
  • Cardamom – 2
  • Star anise – 1

Instructions

  • Soak the rice in Luke warm water for 30 minutes - 1 hour
  • Add oil in a pan and cook on medium heat. When oil is hot, add the whole spices and cook for 40 seconds. Add onion, garlic ginger paste and green chilli, cook till the onion becomes translucent
  • Add the peas and sauté for minute. Add rice and sauté for another minute
  • Add mint, water, salt, saffron and orange juice; close the lid and cook the rice, stirring it occasionally. Fluff the cooked Pulav and serve it with raita/ chops/ salna/or any gravy.

Notes

• I have used fresh orange juice without adding sugar. If you are using store-brought juice, use unsweetened
• Pulav can also be cooked in Rice cooker or pressure cooker
• If you are using dry peas, cook it separately and add it to the pulav
• Saffron gives nice color to the rice. Pinch of turmeric powder can be added instead
• Vegetables like carrot, beans, potato, corn, bell pepper extra can be added
• Cashew, almond can be added for extra crunch
• If you prefer the pulav to be slightly sweet, pineapple, raisin, apple etc. can be added towards the end
