Yummy mixed vegetable stuffing wrapped in Roti, perfect for lunch box

Ingredients

  • Wrap Base
  • Whole Wheat Flour - 2 Cups
  • Oil - 1 Teaspoon
  • Salt – A pinch
  • Water – As needed
  • Filling
  • Sweet Corn Kernels – 1 Cup Steamed
  • Onions – 1 Chopped
  • Yellow Capsicum – Half Chopped
  • Black Olives – Three Tablespoons Sliced
  • Olive Oil – 1 Teaspoon
  • Salt as needed
  • Oregano – A pinch
  • Grated Cheese – As needed

Instructions

  • Make Rotis with Whole Wheat Flour, Slat and oil as per the usual method. Keep aside.
  • Heat a teaspoon of olive oil in a pan. Add chopped onions, yellow capsicum and sauté for a minute in low flame. Now add the steamed corn kernels, Sliced olives, Salt and Oregano. Stir it for a minute and switch off stove.
  • Wrap It Up
  • Place a Roti on a flat base, Put a Tablespoon of the Filling on one end of the Roti, add a spoon of grated cheese. Roll it tight and cut into two halves. Serve with Ketchup.
