Vazhakkai Podimas

Quick and delicious dry curry prepared with plantain. It can be prepared within 10 minutes

Ingredients

  • Vazhakkai - 2 small
  • Coconut - 2 tablespoon + 1/2 tbsp
  • Turmeric powder - 1/8 tsp
  • Salt - as needed

To temper:

  • Coconut oil - 1 tbsp
  • Mustard seeds - 1/8 tsp
  • Channa dal - 1 tsp
  • Red chili - 2
  • Curry leaves - few
  • Asafoetida - generous pinch

Instructions

  • Remove the corners of the plantain and cut it into big pieces.  Microwave with water and little salt for 3-4 minutes, depending upon the size you cut, and microwave. Plaintain can be cooked in a vessel with water and a little salt on stove top alternatively. Make sure raw banana is not overcooked. Keep the raw plantain aside till its cooled
  • Cut the corners and grate it. Keep aside for 5 minutes. Add coconut, salt (check for the seasoning once and add), and Turmeric powder to the grated plantain; mix well.
  • In medium heat, add oil to the pan, once when oil becomes hot add the ingredients under "to temper" and let it crackle. Add the Vazhakkai - coconut mixture and cook for 2-3 minutes on low flame
  • Turn off the stove and poriyal ready

Notes

1. Curry Powder (coriander Seed, channa dal, and red chilli) can be added for extra flavor
2. Turmeric powder can be added while cooking plantain
3. Grated ginger can be added for extra flavor
4. Onion and ginger garlic paste can be added
