Notes

  1. Cold rice from the fridge works best for fried rice. Avoid using hot rice
  2. if you don't have time to refrigerate the rice, spread the hot rice on a plate. Drizzle sesame oil and prepare fried rice after it comes to room temperature
  3. Butter gives amazing flavor to mushroom fried rice, for the vegan version you can use sesame oil
  4. Always discard the stem and chop mushrooms
  5. To make it kids-friendly I have finely chopped mushrooms. You can chop mushrooms according to your preferred size
  6. Consider soya sauce while adding salt
Always add salt after adding rice
