Ragi malt

Ingredients

malt powder

  • 1/2 tablespoon ragi flour
  • 3 cashews
  • 1/2 tablespoon almond flour
  • 1 cardamom
  • saffron pinch

To grind

  • 1 tablespoon sugar
  • 1/2 cup water

ragi kanji

  • 1 + 1/2 cup + 2 tablespoon milk

Instructions

Malt powder

  • first add ragi flour, cashews, almond flour, and cardamom and turn on the stove on low flame
  • Roast on low flame for 4 minutes
  • furthermore, add saffron; mix well and cool

Grind

  • add the ingredients to a mixie jar and grind to a fine powder
  • furthermore add water and sugar; grind again and keep aside

ragi kanji

  • first, add milk and bring to boil
  • furthermore, add the ground mixture and whisk well
  • add little milk to the mixie jar; shake well and transfer
  • whisk well and bring to boil
  • finally, turn off the stove and strain the malt

Notes

  1. There are many versions of healthy drinks with ragi. You can even prepare it without any nuts but to make it kid’s friendly taste and even healthy I prefer adding nuts
  2. you can use store-bought ragi flour, Always dry roast in low flame then prepares malt powder. Avoid roasting in high flame
  3. I prefer using cashews and almonds. If you are using other nuts, the flavor might vary accordingly
  4. grinding with water is optional but this ratio helps for lump-free ragi kanji.

Variations for ragi health drink, use

  1. 3 almonds instead of almond flour
  2. Jaggery or other sweeteners of your choice
  3. Adjust milk/ water according to your preferred taste
  4. Pinch of yellow food color to resemble store-bought health mix malt powder
  5. Mix malt powder with water well then add to milk else it might turn lumpy
