    What is Bendakaya Vepudu

    Bendakaya is a Telugu name for Okra. Tasty Andhra-style curry with lady's finger and peanuts.  It goes well with a variety rice. Also tastes good as a side for Sambar, rasam, kootu, and kuzhambu varieties. Andhra‑style Vendakka Fry, also known as Bendakaya Vepudu, Vendakkai Poriyal, or simply Okra Fry, is a flavorful South Indian side dish made with fresh okra, roasted spices, peanuts, and aromatic tempering. This traditional recipe combines the earthy flavor of coriander, the nuttiness of sesame and peanuts, and the signature Andhra heat from dried red chillies. The result is a crispy, non‑slimy, perfectly spiced bhindi fry that pairs beautifully with rice, sambar, rasam, curd rice, or chapati. If you love simple, homestyle Indian cooking with bold flavors, this Andhra‑style okra fry will become a staple in your kitchen.

    Wash and wipe the okra

    Always wash okra well, then wipe it well with a kitchen towel. Chop and spread on a towel, and make sure there is no moisture in the vendakkai thengai curry

    Should I deep fry okra?

    You can deep-fry or shallow-fry vendakkai according to your taste. I used less oil and roasted

    How do I prevent okra from becoming slimy?

    Cook on medium‑high heat, avoid covering the pan, and sauté until the moisture evaporates. Dry okra completely before chopping.

     What makes this recipe Andhra‑style?

    The roasted peanut‑sesame‑coriander masala and the bold use of dried red chillies give it a distinct Andhra flavor.

    Can I skip peanuts or sesame seeds?

    You can skip one, but using both gives the authentic nutty taste and texture.

    What can I serve with Vendakkai Poriyal?

    It pairs beautifully with:

    • kuzhambu
    • Sambar
    • Rasam
    • Curd rice
    • Chapati or phulka

    Can I use frozen okra?

    Fresh okra works best, but frozen okra can be used if thawed and dried well.

    Is this recipe vegan and gluten‑free?

    Yes — it is naturally vegan and gluten‑free.

    How long does okra fry stay fresh?

    It stays good for 1 day at room temperature and up to 2 days in the fridge. Reheat in a pan for best texture.

    Oil for Bendakaya fry

    I have used peanut oil. You can use sesame oil/coconut oil or any oil of your choice.

    Can I skip the onion and garlic?

    Onion and garlic give amazing flavor to the Andhra-style Vendakkai fry.

    Ingredients

    To roast & grind

    1 tablespoon coriander seeds

    ½ tablespoon sesame seeds

    Dried red chillies (to taste)

    ¾ teaspoon cumin seeds

    ¼ cup roasted peanuts

    For poriyal

    1+½ tablespoon peanut oil

    ½ teaspoon mustard seeds

    Curry leaves

    1 green chilli (slit)

    3 garlic cloves (crushed)

    1 onion (sliced)

    300 g okra (vendakkai) chopped

    Turmeric powder – a pinch

    Salt – 1 teaspoon (adjust to taste)

    How to make Andhra style vendakkai fry with step by step pivtures

    •  First, dry-roast coriander seeds, sesame seeds, and red chillies until aromatic

    •  Add cumin seeds and roasted peanuts, switch off the flame, cool slightly, and coarsely grind

    •  Heat peanut oil in a pan and splutter mustard seeds

    •  Add curry leaves, green chilli, garlic, and onion; sauté until onions turn soft

    •  Furthermore, add okra, mix well, and cook on medium-high heat until the slimy texture goes off

    •  Add turmeric powder and salt; give a quick mix

    • finally, add the ground masala and sauté well for 4–5 minutes until everything comes together
