Mint chocolate chips ice cream

Ingredients

  • 2 cups heavy cream cold
  • 1 can condensed milk
  • 1 teaspoon mint extract
  • Few drops of green food coloring
  • 1 cup chocolate chips

Instructions

  • Firstly add  heavy cream to an electric mixer; whisk well until you see  stiff peaks
  • Add sweetened condensed milk, mint extract, and a few drops of green food coloring into the whipped cream; whisk well to mix
  • Furthermore, add chocolate chips and mix  until just combined
  • Transfer the ice cream to freezer safe box and freeze for at least 6 hours or overnight
  • Thaw for 5 minutes then scoop and enjoy

Notes

  1. Never use room temperature heavy cream as it might curdle. Chill heavy cream works best
  2. Whisk well till you get stiff peaks for the best ice cream. I used an electric stand mixer. You can also use a hand mixer.  using a whisk might be too much of an effort
  3. Always use one whole can of condensed milk as it gives perfect taste and texture. I have used room temperature condensed milk. You can also use the condensed milk from the fridge
  4. Use a safe freezer box to avoid churns. Always freeze at least for 6 hours then consume
  5. Thaw the ice cream for at least 5 mins then school and serve. You can bath the ice cream scoop in hot water; wipe the water then scoop.
variation 
  1. Food color is optional
  2. Adjust the quantity according  to your preference
  3. Use 1/2 teaspoon of mint extract for a subtle flavor 
  4. Mini chocolate chips or dark chocolate chips or chopped chocolate can be used
  5. Top it with your favorite topping
