Soak peanuts overnight in enough water.
Pressure cook peanuts with fresh water and salt for 6 whistles, or until soft but not mushy. Drain and cool.
In a mixing bowl, add cooked peanuts, tomato, onion, mango, cucumber, grated carrot, and pineapple.
Add chaat masala and lemon juice; mix gently.
Finish with fresh coriander leaves
