Ingredients

Sprouts

  • 1/4 cup moong beans
  • Water

Salad

  • Grated carrot
  • Raw mango
  • Cucumber
  • Onion
  • Tomato
  • Coconut
  • Lemon juice
  • Salt
  • Crushed peanuts
  • Coriander leaves

TEMPER

  • Mustard seeds
  • Green chillies

Instructions

SPROUTS

  • ️ Wash and soak moong beans in cold water for 12 hours until they soften when pressed
  • ️ Drain the water using a colander
  • ️ Transfer the moong beans to a hot pack and spread evenly
  • ️ Close and keep undisturbed for 24 hours (sprouting time may vary based on weather)
  • ️ Open, gently shake, and if needed, close and rest again for further sprouting
  • ️ Once sprouted to your liking, refrigerate

SALAD

  • ️ Steam the sprouts for 3 minutes for better digestion
  • ️ Add tomato, onion, raw mango, cucumber, and grated carrot; mix well
  • ️ Add salt, lemon juice, and coconut; mix well
  • ️ Finally, add crushed peanuts and coriander leaves

TEMPER (OPTIONAL)

  • ️ Heat a little oil, add mustard seeds, and let them splutter
  • ️ Add chopped green chillies and sauté briefly
  • ️ Pour over the salad and mix gently
