Thai pineapple fried rice

Ingredients

cook rice

  • 1 cup jasmine rice
  • 1/2 cup + 1 cup water
  • Required salt
  • 1/2 teaspoon Sesame oil
  • Spring onion

Marinate and Fry tofu

  • 1 teaspoon corn flour
  • 1 +1/2 cup firm tofu
  • 1 teaspoon soya sauce
  • 1/2 teaspoon garlic powder
  • 1 teaspoon all purpose flour
  • Sesame oil 1 tbsp

Pineapple Fried rice

  • 1 tablespoon sesame oil
  • 6 garlic finely chopped
  • 1 +1/2 cup mixed vegetables I used carrot, broccoli and peas
  • 1/2 tablespoon soya sauce
  • 1 +1/2 teaspoon Brown sugar
  • Required salt
  • 2 tablespoon vegetarian oyster sauce
  • Spring onion

Instructions

Marinate tofu

  • First drain the water completely and cut the firm tofu
  • Add soya sauce, corn flour, all purpose flour, garlic powder; mix well and keep aside

Cook rice

  • Boil water with required salt and sessame oil
  • Wash jasmine rice and add; when it boils well
  • Cover and cook for 7 minutes; till rice turns fluffy
  • Turn off the stove ; rest for 5 minutes
  • add spring onions; mix well and transfer to a plate
  • drizzle oil and and keep aside

fry tofu

  • Add oil and heat in medium-high flame
  • Fry tofu golden brown and keep aside

Pineapple fried rice

  • Add oil and roast cashews and raisins golden brown; keep aside
  • Furthermore add garlic and roast golden brown
  • Add mixed vegetables and cook for 2 minutes
  • Furthermore, add salt and turmeric powder; saute for 2 minutes
  • Add pineapple and brown sugar; saute for 1 minute
  • Furthermore, add soya sauce and oyster sauce; mix well
  • Add rice; saute for 2 minutes
  • furthermore add roasted cashew, raisins and tofu; mix well
  • Finally sprinkle spring onion; mix well
