Ingredients

To soak

  • 1 cup sona masoori rice
  • water to soak

ground masala

  • Handful of mint and coriander leaves
  • 2 green chilli
  • 4 garlic
  • Small piece ginger
  • 1/2 cup onion
  • 1 clove
  • Cinnamon small piece
  • 1 cardamom
  • 1/4 cup coconut
  • 1/2 teaspoon poppy seeds
  • 1 clove
  • 1/2 teaspoon fennel seeds

Karnataka vegetable palav

  • 2 tablespoon peanut oil
  • 1/2 teaspoon cumin seeds
  • 1 bay leaf
  • 3/4 cup onion
  • 1 tomato
  • 1/4 teaspoon turmeric powder
  • Required salt
  • 250 grams mixed vegetables
  • 2 cups Water
  • 1/2 teaspoon lemon juice

Instructions

  • First, wash and soak for 30 minutes
  • Add the ingredients mentioned under "ground masala" and water; grind well

  • Add oil to the pressure cooker
  • Turn on the stove to medium flame and heat
  • Add bay leaf and cumin seeds; splutter
  • Furthermore, add onion; mix well and saute till onion turns translucent
  • Add tomato; mix well and saute for 1 minute
  • Furthermore, add turmeric powder and salt; mix well and saute till tomatoes turn mushy
  • Add ground masala; saute for 2 minutes
  • Furthermore, add carrots, beans, frozen peas, and potato; mix well and cook for 2 minutes
  • Add water and bring to boil
  • Furthermore, add soaked rice; mix well
  • Bring to a frothy boil
  • pressure cook for two whistles; turn off the stove
  • After the pressure subsides naturally, open the cooker
  • Gently fluff the rice
  • Finally, add lemon juice; serve hot

Notes

Tips for masala

  1. Always grind the masala a few minutes before using else it change color
  2. Adjust chilli according to your taste
  3. Star anise or any other whole gram masala of your choice can be added
  4. Coconut gives amazing flavor don't skip
  5. Avoid adding more water while grinding, it might alter the rice texture
