PRESSURE COOK POTATOES 

Always cook potatoes in a pressure cooker for this method. Add water just as required. We need mashed potatoes for this recipe. 

SHOULD I USE A POTATO MASHER?

Traditionally, potatoes are crumbled for podimas. You can slightly mash using your hands to avoid the mashers.

 

Can I use chilli powder?

Sambar powder gives a nice flavor, but if you are using chilli powder, use turmeric powder, coriander powder.

Can I reduce garlic?

Garlic gives the best flavor. I would recommend more, but reduce according to your taste 

Iron pan 

An iron pan gives the best texture. Nonstick doesn’t give the same texture.

Serving suggestion

South Indian potato pidinas taste best with a variety of rice, and curd rice. You can also have it as a side for chappathi/poori. It also tastes yummy when mixed with rice.
