Pudla | Chilla | Eggless Omelette | Besan pancake | Indian pancake | soft instant uthappam is a tasty savory breakfast prepared with besan flour. This is the Indian version of spicy pancakes. Besan Ka Cheela can also be taken as a side for rice. This besan flour breakfast tastes like a vegetarian version of an omelet.

What is Pudla or Besan Chilla? A savory Indian pancake made with besan flour, veggies, and spices — similar to an eggless omelette.

Why is it called a vegetarian omelette? Because it has the same soft, fluffy texture and savory flavor as an omelette, but without eggs.

Is pudla vegan? Yes. It contains no dairy or eggs.

Why add baking soda? It helps the pancake turn soft and airy.

Can I skip tomatoes? Yes. Add capsicum, grated carrot, or spinach instead.

Why does my chilla taste raw? Besan needs to be cooked well. Always cook on medium‑low heat until both sides are golden.

Can I make this without onions? Yes. Skip onions for a no‑onion version or replace with spring onions.

How thick should the batter be? Slightly thinner than dosa batter. It should spread on its own when poured.

Can I add spices? Yes — chilli powder, ajwain, cumin, or crushed pepper all work well.

Does pudla stay soft after packing? Yes. It stays soft for hours, making it great for lunchboxes.

Can I make this gluten‑free? It already is — besan is naturally gluten‑free.

I thought chickpea flour pudla would taste like Adai because of besan, but this one was super soft.

FewIngredients: Besan flour - 2 cups Water - 2 cups + 1/3 cup Onion - 1/2, finely chopped Tomato - 1 Coriander leaves - 3 tbsp, finely chopped Lemon juice - 2 tbsp Baking soda - 1/2 tsp Turmeric powder - 1/4 tsp Salt - as needed Oil - 1 tbsp + extra to make pancakes

Instructions

  • In a wide bowl add besan flour and 2 cups of water; whisk it well with electric mixer or hand whisk to remove all the lumps
  • Add all other ingredients mentionedoneby one and mix eveything well
  • Heat the dosa griddle and add oil to grease. Add 1/3 of water to the batter and mix well. Take around 1/2 cup of water. The batter will spread on its own. Drizzle oil and when you see pores and batter becomes slightly dry flip it. Cook other side and serve with ketchup or green chutney

Notes

  1.  Adjust the water according to your consistency
  2.   Chili powder can be used instead of green chilli
  3. Pancake stays soft for hours
  4. Capsicum, mushroom etc can be added for extra taste
  5.  Cook the pancake well otherwise besan flour might have raw taste. Cook the pancake in medium - low flame
  6.  Green chutney, ketchup etc can be used as a side
  7. Original recipe called for 1tsp ajwain seeds but ajwain seeds was not in home so I skipped it
  8. Adjust the pancake size according to your preference
