Can I make thengai ladoo with regular coconut?

Yes, you use regular coconut for making nariyal laddu. If you are using frozen coconut, thaw it and bring it to room temperature. Coconut kept in the fridge also needs to come to room temperature before cooking. Once the coconut comes to room temperature, dry roast in a low flame till the moisture evaporates and the coconut turns dry. Avoid browning the coconut.

Can I make Thengai laddu with desiccated coconut?

Yes, you can use but the quantity varies. If you are using desiccated coconut use 1 cup for ¼ cup of condensed milk. Also, it is not required to cook the mixture if you are using desiccated coconut. Simply mix  well and roll laddu.

Unsweetened coconut flakes look lengthy. Can I pulse them?

I used store-bought coconut flakes, and the flakes look lengthy. If you prefer small flakes, pulse them in a mixie and make laddu.

Can I use milk and sugar instead of condensed milk?

Yes, you can milk + sugar instead of condensed milk, but you need to cook for a long time compared to this version.  Use ½ cup of milk and ⅓ cup of sugar.

Ingredients

  • ¾ cup unsweetened coconut flakes
  • ¼ cup condensed milk
  • ½ teaspoon cardamom powder
  • 1 teaspoon ghee

Instructions

  • n a heavy-bottomed pan, add coconut flakes, condensed milk, and ghee
  • Mix well with your hands and make sure everything is blended well before turning on the stove
  • Turn on the stove to a low flame and keep sauteeing
  • The mixture comes together and turns non-sticky. Turn off the flame immediately
  • Let the mixture turn warm. When it is warm enough to handle, grease your hands with ghee and pinch a small portion of the mixture and roll it into a laddu
  • Coat the laddu with coconut flakes and enjoy

Notes

  1. If you are using desiccated coconut instead of unsweetened coconut flakes, use 1 cup of desiccated coconut  for ¼ cup of condensed milk
  2. If you feel coconut flakes are big, pulse them in mixie and use
  3. You can use regular coconut instead of coconut flakes. Dry roast the coconut till the moisture evaporates, avoid browning it
  4. Add rose essence or any other favoring according to your choice
  5. You can add food color to make it colorful
  6. If you use desiccated coconut, cooking it is optional. Mix all ingredients and make laddu
  7. Almond flakes or any other crushed nuts can be used for coating
