The quickest and most reliable method is microwave drying. It removes moisture evenly and keeps the leaves crisp for long‑term storage.

Can I sun‑dry curry leaves instead of using a microwave?

Yes. Spread washed and dried curry leaves on a cloth and sun‑dry them for 1–2 days until crisp. This is a natural method but depends on the weather.

How do I know the curry leaves are fully dried?

When you can crush them easily between your fingers, they are ready to store.

How long do dried curry leaves last?

If stored in an airtight container, they stay fresh for 3–6 months.

Ingredients

  • Curry leaves
  • Water

Instructions

  • Wash curry leaves well in water
  • Strain it in a colander
  • Squeeze the curry leaves well
  • Dry the curry leaves in a cloth for atleast one hour
  • Press them with paper towel to remove moisture
  • Fold the curry leaves in a paper towel to remove extra moisture
  • Spread the curry leaves in microwave safe plate
  • Microwave for 1 minute
  • Check and repeat. Microwave again for 2 more minutes
  • Mine got done in 3 minutes. Depending on microwave powder and quantity
  • When the curry leaves can be pressed with hands it is done
