This versatile rajma mixture transforms beautifully into crispy Rajma Tikkis, melt‑in‑mouth Veg Galouti Kebabs, and a flavor‑packed Rajma Burger Patty. Made with mashed rajma, paneer, spices, and veggies, this recipe is high in protein, easy to prepare, and perfect for snacks, starters, or wholesome meals. Whether you shallow‑fry them as tikkis, shape them into soft kebabs, or stack them inside a burger, this rajma base delivers incredible texture and taste every single time.

What makes these rajma tikkis crisp yet soft inside?

The combination of mashed rajma, paneer, besan, and breadcrumbs creates a perfect balance of binding and softness.

Can I use the same mixture for galouti kebabs?

Yes — simply shape them smaller and cook on low heat for a softer, melt‑in‑mouth texture.

Is this mixture suitable for burger patties?

Absolutely. The firm binding ensures the patties hold shape well inside a burger.

Can I air‑fry or bake instead of shallow frying?

Yes — air‑fry at 375°F for 10–12 minutes or bake at 400°F for 15–20 minutes.

How do I prevent the mixture from becoming too wet?

Drain cooked rajma completely and mash lightly. If still wet, add a spoon of breadcrumbs.

how to make rajma cutlet with step by step pictures

  • ️ Soak the rajma overnight.
  • ️ Pressure cook the rajma with enough water until soft. Drain water completely

  • ️ Add onion, capsicum, salt, garam masala, curry powder, Kitchen King masala, Kashmiri chilli powder, grated paneer, besan, sesame seeds, ginger-garlic paste, and panko breadcrumbs. Mix everything well until the mixture comes together.

  • ️ Grease your palms with a little oil. Divide the mixture into equal portions, roll into balls, and flatten into tikkis.

  • ️ Heat a pan with a little oil. Shallow fry the rajma tikkis on medium heat until golden brown and crisp on both sides.

  • ️ Serve hot

Baked Cutlet:

  • Preheat the oven to 400 degrees Fahrenheit. Take the baking tray and line a parchment oil and grease it with oil
  • Take small portions of the mixture, and flatten them using your palm (I made it thinner)
  • Place them in the greased tray and brush  the top portion of each cutlet with a little oil to avoid drying out and, of course, for the crispy finish
  • Bake for 15-20 mins in total. flip inbetween till they have browned on the underside (adjust time according to your oven). Carefully flip them. Remove and serve immediately.
