Wash and soak the horse gram overnight.
Add soaked horse gram, pepper, cumin seeds, coriander seeds, fenugreek seeds, garlic, turmeric powder, sesame oil, and water to a pressure cooker.
Pressure cook for 10 whistles and simmer for 1 minute.
Once the pressure releases naturally, check if the horse gram is soft and cooked well. Add salt and bring it to a quick boil.
Allow the mixture to cool completely and grind into a smooth puree.
Add thick curd or Greek yogurt and blend once again until creamy.
Add extra water if required to adjust the consistency of the kanji. Serve warm and enjoy.
