Kollu Kanji, also known as Horse Gram Kanji, is a nourishing South Indian porridge made with horse gram, aromatic spices, garlic, and curd. Ingredients

2 tbsp horse gram | kollu

1/4 tsp pepper

1 tsp coriander seeds

1/4 tsp cumin seeds

A few fenugreek seeds

1/4 tsp sesame oil

2 garlic cloves

1½ cups water

1/4 tsp turmeric powder

3/4 tsp salt

1/4 cup thick curd or Greek yogurt

Instructions

  •  Wash and soak the horse gram overnight.
  • Add soaked horse gram, pepper, cumin seeds, coriander seeds, fenugreek seeds, garlic, turmeric powder, sesame oil, and water to a pressure cooker.

  •  Pressure cook for 10 whistles and simmer for 1 minute.

  •  Once the pressure releases naturally, check if the horse gram is soft and cooked well. Add salt and bring it to a quick boil.

  • Allow the mixture to cool completely and grind into a smooth puree.

  • Add thick curd or Greek yogurt and blend once again until creamy.

  • Add extra water if required to adjust the consistency of the kanji. Serve warm and enjoy.
