raw mango rice

Ingredients

  • 2 cups cooked rice + extra as needed
  • 1 +1/2 cups raw mango peeled and grated
  • 1/4 tsp turmeric powder
  • Salt as needed
  • Coriander leaves
  • A pinch of asafoetida
  • 1/2 tsp ginger powder or grated ginger

TO TEMPER

  • 1 tbsp sesame oil
  • 1/2 tsp mustard seeds
  • 1 tbsp chana dal
  • 1/2 tsp cumin seeds
  • 2 green chillies
  • 1 tbsp urad dal
  • 1/4 cup peanuts
  • 2 red chillies adjust to spice level
  • A few curry leaves
  • 8 cashews

Instructions

  • Cook the rice and spread it on a wide plate or pan to cool slightly.
  • ️ Heat sesame oil in a pan. Add mustard seeds and let them splutter. Add urad dal, chana dal, cumin seeds, peanuts, and cashews. Roast until golden.
  • ️ Add green chillies, red chillies, and curry leaves. Sauté for a few seconds.
  • ️ Furthermore, add grated raw mango, turmeric powder, asafoetida, ginger, and salt. Mix well and cook for about 2 minutes until the raw smell reduces slightly.
  • ️ Add the cooked rice and gently mix until the mango mixture coats the rice evenly.
  • ️ Taste and add extra rice if the mango is too sour. Adjust salt if needed.
  • ️ Finish with coriander leaves and let the rice rest for a little while before serving for the best flavor.
