Cook the rice and spread it on a wide plate or pan to cool slightly.
️ Heat sesame oil in a pan. Add mustard seeds and let them splutter. Add urad dal, chana dal, cumin seeds, peanuts, and cashews. Roast until golden.
️ Add green chillies, red chillies, and curry leaves. Sauté for a few seconds.
️ Furthermore, add grated raw mango, turmeric powder, asafoetida, ginger, and salt. Mix well and cook for about 2 minutes until the raw smell reduces slightly.
️ Add the cooked rice and gently mix until the mango mixture coats the rice evenly.
️ Taste and add extra rice if the mango is too sour. Adjust salt if needed.
️ Finish with coriander leaves and let the rice rest for a little while before serving for the best flavor.
