Heat the coconut oil in a pan. Add mustard seeds and cumin seeds, and let them splutter.
Add curry leaves, red chillies, garlic, and shallots. Sauté until they turn translucent.
Add turmeric powder, salt, and mushrooms. Mix well, cover, and cook until mushrooms are soft and cooked through.
Finally, add coconut pieces and coriander leaves. Mix well and switch off the flame.
