Tomato sweet pachadi

Ingredients

Cook

  • 2 tomatoes 235 g
  • 1/2 cup water
  • 7 cashews

Roast

  • 1/2 tablespoon ghee
  • 2 dates finely chopped
  • 1 tablespoon raisins

Pachadi

  • 1/4 cup + 2 tablespoon sugar
  • Pinch of salt
  • 1/4 teaspoon cardamom powder

Instructions

  • First add tomatoes, water, and cashews in a separator; pressure cook for 10 whistles and do natural pressure release
  • Peel the tomatoes skin and mash it with a ladle
  • Add ghee to pan and heat in medium flame
  • furthermore, add raisins and dates and saute
  • Add mashed tomatoes and mix well
  • Furthermore add sugar, cardamom powder, and salt; mix well
  • Cook for 15 minutes till the mixture comes together

Notes

  1. You can add food color to make it colorful
  2. Always use ripe tomatoes
  3. Peeling tomato skin is optional but it gives a good texture to the pachadi
  4. You can mash the tomatoes according to your preference
  5. Adjust the sugar according to your taste
  6. Clove and cinnamon can be added for extra flavor
