Ingredients

For marination

  • 1 + 1/2 cups mixed vegetables
  • Required salt
  • 1 green chilli
  • 1 teaspoon Kitchen King masala
  • 1 teaspoon garam masala
  • 1 teaspoon biryani masala
  • 1/2 cup coconut milk
  • 2 tablespoons thick curd
  • 5 garlic cloves finely chopped
  • Finely chopped coriander leaves
  • Finely chopped mint leaves

FOR LAYERING

  • 1 tablespoon ghee
  • 8 cashews
  • Whole garam masala
  • 1 teaspoon fennel seeds
  • 1/2 cup sliced onion
  • 3/4 cup basmati rice washed and drained
  • 1 cup water minus 2 tablespoons
  • 1/2 teaspoon sesame oil
  • 2 tablespoons grated coconut

Instructions

  • ️Add the mixed vegetables, salt, green chilli, Kitchen King masala, garam masala, biryani masala, coconut milk, curd, garlic, coriander leaves, and mint leaves to a bowl.
  • ️ Mix well and marinate as needed.
  • ️ Add ghee to a pressure cooker
  • ️ Add cashews, whole garam masala, and fennel seeds
  • ️ On top, add the sliced onion
  • ️ Spread half of the marinated vegetables evenly over the onions.
  • ️ Layer the washed and drained basmati rice over the vegetables.
  • ️ Add the remaining marinated vegetables over the rice.
  • ️ Pour in the measured water and drizzle sesame oil on top.
  • ️ Sprinkle the grated coconut. Avoid mixing the layers.
  • ️ Close the pressure cooker and cook for 2 whistles.
  • ️ Let the pressure release naturally. Gently fluff the vegetable brinji and serve hot.
