This aromatic vegetable brinji is a classic South Indian one‑pot rice made with marinated vegetables, coconut milk, fresh herbs, and a fragrant ghee tempering. Unlike biryani, brinji is lighter, coconut‑forward, and deeply comforting. The layered cooking method keeps the rice fluffy while infusing every spoonful with warm spices, fennel, and grated coconut. Perfect for lunch, dinner, or lunchbox meals.

Catering-style vegetable brinji

Vegetables marinated in coconut milk and curd with masala turn flavorful. It is popularly served by caterers to people at wedding receptions 

Vegetables for brinji 

I have used carrots, beans, and capsicum. You can also use peas, potatoes, cauliflower, or any veggies of your choice.

What makes brinji different from biryani?

Brinji is simpler, coconut‑based, and mildly spiced, whereas biryani is richer and layered with stronger masalas.

Why marinate the vegetables?

Marination helps the veggies absorb flavor and stay soft, creamy, and aromatic after cooking.

Can I use seeraga samba rice?

Yes—seeraga samba gives an even more traditional Tamil Nadu brinji aroma.

Why avoid mixing the layers?

Layering ensures fluffy rice on top and flavorful masala at the bottom, giving the signature brinji texture.

Can I make this without coconut milk?

Yes—use regular milk or water, but coconut milk gives the authentic taste.

Can I pack this for lunch?

Absolutely—brinji stays moist and flavorful even after a few hours.

Can I skip biryani masala?

You can prepare homemade biryani masala, but I have used Aachi biryani masala. Adjust the masala according to your taste, but don’t skip it. 

Rice for vegetable brinji

I have used basmati rice. You can use any variety of rice according to your choice. Adjust water accordingly.

Ingredients

For marination

1 + 1/2 cups mixed vegetables

Required salt

1 green chilli

1 teaspoon Kitchen King masala

1 teaspoon garam masala

1 teaspoon biryani masala

1/2 cup coconut milk

2 tablespoons thick curd

5 garlic cloves, finely chopped

Finely chopped coriander leaves

Finely chopped mint leaves

For layering

1 tablespoon ghee

8 cashews

Whole garam masala

1 teaspoon fennel seeds

1/2 cup sliced onion

3/4 cup basmati rice, washed and drained

1 cup water minus 2 tablespoons

1/2 teaspoon sesame oil

2 tablespoons grated coconut

How to make vegetable brinji with step-by-step pictures

  • ️Add the mixed vegetables, salt, green chilli, Kitchen King masala, garam masala, biryani masala, coconut milk, curd, garlic, coriander leaves, and mint leaves to a bowl.

  • ️ Mix well and marinate as needed.
  • ️ Add ghee to a pressure cooker 

  • ️ Add cashews, whole garam masala, and fennel seeds

  • ️ On top, add the sliced onion 

  • ️ Spread half of the marinated vegetables evenly over the onions.

  • ️ Layer the washed and drained basmati rice over the vegetables.

  • ️ Add the remaining marinated vegetables over the rice.

  • ️ Pour in the measured water and drizzle sesame oil on top.

  • ️ Sprinkle the grated coconut. Avoid mixing the layers.

  • ️ Close the pressure cooker and cook for 2 whistles.
  • ️ Let the pressure release naturally. Gently fluff the vegetable brinji and serve hot.
