Delicious vegetable pulao made without onion and garlic, served with cooling yogurt sauce.

Ingredients

To grind

  • Stone flower
  • Clove
  • Cinnamon
  • Star anise
  • 1 tsp fennel seeds
  • 1/2 tbsp salt
  • Mint leaves
  • 1 tsp coriander seeds
  • 1/4 tsp turmeric powder
  • 1 tsp Kashmiri chilli powder
  • 2 tbsp curd
  • 1/4 cup coconut milk

Pulao

  • 500 grams veggies
  • 1 +1/2 cup water
  • 2 tbsp ghee
  • 8 cashews
  • 1/2 tsp sesame oil

Instructions

  • Soak rice for 30 minutes
  • Grind ingredients under “to grind” and mix with veggies
  • marinate for 30 minutes
  • Heat ghee and roast cashews; keep aside
  • Add veggies, soaked rice, and water; boil
  • finally add sesame oil; pressure cook for 2 whistles
