    Other Vegetables for Pulao

    Yes, you can use vegetables like corn, capsicum, mushroom, paneer, etc for pulav.

    CAN I COOK VEGETABLE PULAO IN THE INSTANT POT?

    Yes, for the instant pot version avoid soaking the rice. Add 1: 1 + 1/2  water, cook for 5 minutes, and do natural pressure release. 

    CAN I COOK VEGETABLE PULAO IN OIL?

    Yes, using ghee is optional but it gives the pulav a good flavor. You can use oil for cooking and add a few drops of ghee for aroma.

    Ground masala

    To make the rice flavorful I have ground masala. You can adjust the spice according to taste

    variation for Vegetable pulav without onion and garlic

    You can use

    • the whole spices
    • Garam masala or any masala of choice instead of kitchen king masala
    • Oil 
    • croutons for extra crunch

    Ingredients

    To grind

    Stone flower

    Clove

    Cinnamon

    Star anise

    1 teaspoon fennel seeds

    1/2 tablespoon salt

    Mint leaves

    1 teaspoon coriander seeds

    1/4 teaspoon turmeric powder

    1 teaspoon Kashmiri chilli powder

    2 tablespoon curd

    1/4 cup coconut milk

    Pulao

    500 grams veggies

    1+1/2 cup water

    2 tablespoon ghee

    8 cashews

    1/2 teaspoon sesame oil

    How to make vegetable pulao with step by step pictures

    • Soak rice for 30 minutes

    • Grind ingredients under “to grind” and mix with veggies

    • marinate for 30 minutes

    • Heat ghee and roast cashews; keep aside

    • Add veggies, soaked rice, and water; boil

    • finally, add sesame oil; pressure cook for 2 whistles
