This addictive Andhra Style Bendakaya Vepudu is a crispy okra fry made with a spiced besan‑rice flour coating and finished with crunchy fried cashews, peanuts, garlic, green chillies, and curry leaves. It’s the perfect mix of texture and heat—crispy, spicy, and packed with Andhra flavors. This okra pakodi works beautifully as a side dish for meals or as a crunchy evening snack.

What is Bendakaya Vepudu

Bendakaya is a Telugu name for Okra. Tasty Andhra-style curry with lady’s finger and peanuts.  It goes well with a variety rice. Also tastes good as a side for Sambarrasamkootu, and kuzhambu varieties.

Wash and wipe the okra

Always wash okra well, then wipe it well with a kitchen towel. Chop and spread on a towel, and make sure there is no moisture in vendakkai thengai curry

Why must okra be completely dry?

Dry okra ensures the flour mixture sticks well and fries crisp instead of turning soggy.

What gives the pakodi its crispiness?

The combination of besan, rice flour, and corn flour creates a crunchy coating that stays crisp even after mixing with fried nuts and spices.

Can I air‑fry instead of deep‑fry?

Yes—air‑fry at 180°C (350°F) for 15–18 minutes, shaking halfway. It won’t be as crispy as deep‑fried but still tasty.

Oil for Bendakaya fry

I have used peanut oil. You can use sesame oil/coconut oil or any oil of your choice.

Why fry cashews, peanuts, garlic, and chillies separately?

Each ingredient has a different frying time. Frying separately ensures everything becomes perfectly crisp without burning.

Can I adjust the spice level?

Yes—add more Kashmiri chilli powder or a pinch of red chilli powder for extra heat.

How to keep okra crispy for longer?

Drain oil well, avoid covering the dish, and mix the fried okra with nuts only before serving.

What can I serve this with?

It pairs well with sambar rice, curd rice, rasam, or can be enjoyed as a crunchy snack.

To marinate

1/4 cup besan flour

1/4 cup rice flour

2 tbsp corn flour

1 tbsp Kashmiri chilli powder

1/2 tbsp garam masala

Turmeric powder

Salt

4 + 1/2 cups okra, washed, completely drained, and chopped

To fry

Oil

Cashews

Peanuts

Green chillies

Curry leaves

Garlic

To finish

Kashmiri chilli powder

Salt

Asafoetida

How to make Andhra Style Bendakaya Vepudu  with step-by-step pictures

  • ️ First, make sure the washed okra is completely dry before chopping.
  • ️ Add all the ingredients listed under “To marinate” to a wide mixing bowl; mix well until the okra is evenly coated.

  • ️ Heat enough oil for deep frying.
  • ️ Deep fry the cashews, peanuts, green chillies, curry leaves, and garlic one by one until crisp. Remove and drain the excess oil.

  • ️ Sprinkle Kashmiri chilli powder, salt, and asafoetida over the fried ingredients; mix well.

  • ️ Deep fry the marinated okra in batches until crispy. Avoid overcrowding the pan.

  • ️ Drain the excess oil completely.
  • ️ Add the crispy fried okra to the fried cashews, peanuts, garlic, green chillies, and curry leaves.

  • ️ Mix everything well and serve immediately.
