Cashew squares | cashew shortbread bar | cashew cookie bar | cashew bite | cashew Burfi baked | cashew bars | baked cashew squares |  cashew burfi | cashew cake are super easy, tasty with just 3 ingredients. The best part of these cashew bars is that they just take less than 5 minutes to prepare the batter. We don’t need a whisk or electric mixer for the batter; all we need is a mixing bowl and a spatula.

Condensed milk – creates the magic for the taste

I love recipes based on condensed milk. It gives an amazing flavor to any recipe. This cashew square is all about condensed milk and cashew flavor. If you are looking for sweets with minimal ingredients, these cashew squares are perfect.  Condensed milk gives richness and sweetness to the cashew bite.

Can I make these cashew squares into cashew shortbread cookies?

As I mentioned in the chocolate chip cookie, you can easily convert the squares into cookies. Drop a tablespoon of batter on a greased cookie sheet and bake them for 10 -12 minutes until they turn slightly brown at the bottom. The cookies will be a little firm on the outside and softer in the center. 

How to get firm shortbread-like cashew squares?

I have used an 8* 8 square pan for baking. For this quantity, it gives soft cashew squares. If you prefer shortbread cashew squares, use a bigger pan. I have tried baking shortbread squares with half of the mentioned quantity in the 8*8  square pan, and it was towards the cookie texture. Alternatively, you can also spoon the batter for cookies

Can I use Whole wheat flour?

You can use wheat flour, but the taste might slightly vary.

Ingredients

  • 1 can Condensed milk
  • 155 grams 1.25 cups all-purpose flour
  • 1/4 cup heaped Roughly chopped Cashew
  • 1/2 tsp cardamom powder
  • 1/2 tsp sugar optional

Instructions

  • Preheat the oven to  320 F
  • Line an 8 x 8-inch square baking pan with parchment paper and grease with butter spray
  • In a mixing bowl add flour, and  cardamom powder; mix well
  • Furthemore, add condensed milk, and 2 tbsp of  cashew; mix well to make a lump free smooth batter
  • Pour into the prepared baking pan and tap to remove air bubbles
  • Sprinkle 2 tbsp of cashew all around the batter and sprinkle sugar
  • Bake on the center rack for 20 minutes or until a toothpick inserted comes out clean
  • Cool in the pan for 10 minutes
  • Cut into squares and enjoy

Notes

  1. Walnuts, pista, almonds, or any nuts of choice can be used
  2. Cranberry, raisins, or any dry fruits of your choice can be used
  3. Tutti frutti or any candied fruits can be used instead of cashews 
  4. For shortbread cookie-like texture use a bigger square pan
  5. Cardamom powder is optional, you can use vanilla extract or any essence of your choice
  6. Sprinkling sugar is optional
  7. Cashew squares stay good for 2 weeks
