This Lingaiah peanut chutney is a bold, spicy Hyderabad‑style tiffin center chutney made with roasted peanuts, garlic, tamarind, and a unique coarse‑ground tempering. The combination of crunchy urad dal, cumin, mustard, and curry leaves adds texture and aroma, making this chutney perfect for idli, dosa, paniyaram, or even as a spread. Ingredients

To temper & grind

1/2 tbsp peanut oil 

1 tbsp urad dal

1/2 tsp mustard seeds 

1 tsp cumin seeds

Curry leaves

For chutney

3/4 cup peanuts 

5 garlic cloves

Tamarind, small piece

Chilli powder, as required

Salt, as required 

Water, as required

How to make Lingaiah Peanut Chutney with step-by-step pictures

  • ️ Heat peanut oil and add mustard seeds, urad dal, cumin seeds, and curry leaves. Temper until aromatic and golden. Transfer to a plate and cool completely.

  • ️ Once cooled, pulse the tempering mixture coarsely and keep aside.

  • ️ In the same pan, add peanuts and garlic; roast well until the peanuts turn aromatic.

  • ️ Add tamarind and sauté for 1 minute.

  • ️ Add chilli powder and salt; mix well and turn off the stove.

  • ️ Cool completely, then grind with the required water to your preferred chutney consistency.

  • ️ Finally, add the ground tempering mixture
