Manga Sadam (Raw Mango Rice / Mangai Sadam) is a classic South Indian variety rice bursting with tangy raw mango flavor, crunchy peanuts, and aromatic tempering. It’s a quick lunchbox favorite made with cooked rice, grated mango, and a simple spice mix that brings the perfect balance of sourness and heat. This traditional recipe comes together in minutes and is ideal for busy weekdays, festive spreads, or leftover rice makeovers. It is a very popular Andhra-style mixed rice widely called Mamidikaya pulihora. In Karnataka, it is popular as mavinakayi chitranna. 

Can I use semi‑ripe mango for manga sadam

Raw, firm, sour mango works best. Semi‑ripe mango will make the rice slightly sweet.

Why does my mango rice turn too sour?

Some mangoes are naturally very tangy. Just add extra cooked rice to balance the flavor.

Can I make mango rice ahead of time?

Yes — it tastes even better after resting for 30 minutes as the flavors deepen.

What rice works best for mangai sadam

Short‑grain rice like sona masoori or ponni works beautifully because it stays fluffy.

Can I skip peanuts or cashews?

Yes — but they add crunch. You can replace them with roasted gram or sunflower seeds.

Ingredients

2 cups cooked rice + extra as needed

1 +1/2 cups raw mango, peeled and grated

1/4 tsp turmeric powder

Salt as needed

Coriander leaves

A pinch of asafoetida

1/2 tsp ginger powder or grated ginger

To temper

1 tbsp sesame oil

1/2 tsp mustard seeds

1 tbsp chana dal

1/2 tsp cumin seeds

2 green chillies

1 tbsp urad dal

 1/4 cup peanuts

2 red chillies (adjust to spice level)

A few curry leaves

8 cashews

How to make manga sadam with step-by-step pictures

  • ️ Cook the rice and spread it on a wide plate or pan to cool slightly.
  • ️ Heat sesame oil in a pan. Add mustard seeds and let them splutter. Add urad dal, chana dal, cumin seeds, peanuts, and cashews. Roast until golden.
  • ️ Add green chillies, red chillies, and curry leaves. Sauté for a few seconds.

  • ️ Furthermore, add grated raw mango, turmeric powder, asafoetida, ginger, and salt. Mix well and cook for about 2 minutes until the raw smell reduces slightly.

  • ️ Add the cooked rice and gently mix until the mango mixture coats the rice evenly.

  • ️ Taste and add extra rice if the mango is too sour. Adjust salt if needed.

  • ️ Finish with coriander leaves and let the rice rest for a little while before serving for the best flavor.
