The pasta is steam‑cooked along with the vegetables for convenience, then tossed in a luxurious shahi paneer–style gravy enriched with milk, cream, and cheese. Ingredients

1½ cups pasta

3 cups water

To Steam Cook

1/4 cup onion

1/4 cup tomato

3 tbsp carrot

2 garlic cloves

3 cashews

1/2 tsp melon seeds

50 g paneer

To Grind

1/2 tsp sugar

Salt – to taste

1/2 tbsp shahi paneer masala

1 tsp garam masala

1/4 cup milk

little water (as needed)

For the Pasta

1 tbsp ghee

Ground masala

Reserved pasta cooking water (as needed)

Cooked pasta

Cheese – as needed

Heavy cream – as needed

How to make shahi paneer pasta with step-by-step pictures

  • ️ In an idli cooker, add the pasta with 3 cups of water. Place the onion, tomato, carrot, garlic, cashews, melon seeds, and paneer on the steamer plate. Steam everything together until the pasta is cooked and the vegetables are soft for around 12 mins

  • ️ Drain the pasta, reserving some of the cooking water.
  • ️ Allow the steamed vegetables and paneer to cool. Add them to a blender along with sugar, salt, shahi paneer masala, garam masala, milk, and water. Grind into a smooth paste.

  • ️ Heat ghee in a pan. Add the ground mixture and sauté for a minute.

  • ️ Pour in a little reserved pasta water to adjust the consistency and bring it to a gentle boil.
  • ️ Add the cooked pasta and mix until well coated.

  • ️ Finish with heavy cream and cheese. Mix gently until the cheese melts.

  • ️ Serve hot and enjoy this creamy Shahi Paneer Pasta.
