protein-rich soya is not used commonly because of its aftertaste. If you like restaurant-style soya chunks chukka. Here is a version without deep frying. This versatile dish is perfect for lunch, dinner, or even as an appetizer for your next gathering

Tips to note  

  • I recommend  using mini soya 
  • Always soak them well till they turn soft 
  • Drain the water completely and squeeze the water well so it absorbs all the flavor without turning bland

Should I parboil soya?

Soaking is enough to turn them soft if you use mini soya chunks.

can I use regular onion?

yes you can use a regular onion but a small onion gives the best flavors

Spice mix

you can add garam masala or any other flavors of your choice

can I add tomatoes?

if you like semi-gravy consistency add tomatoes but I prefer this dish without tomatoes

Can I make them ahead of serving time?

yes, it is perfect for dinner parties. you can make it ahead. if you are reheating cover and cook. if required sprinkle water

Ingredients 

1 cup soya chunks

roast and grind

1 teaspoon fennel seeds

3 red chilli

1 teaspoon pepper

1 teaspoon cumin seeds

1 teaspoon corainder seeds

to temper

1 tablespoon peanut oil

red chilli

1 teaspoon fennel seeds

curry leaves

5 garlic

15 small onion

2 tablespoon water

1 teaspoon sesame oil

Required salt

¼ teaspoon pepper powder

How to make Gobi fry with step-by-step pictures

  • First, add soya chunks to a wide vessel

  • Furthermore, add water and soak for 30 minutes

  • Transfer to a colander and drain the water completely. Squeeze well and make sure the water is not dripping
  • add all the ingredients under " roast and grind" to a wide pan; roast well

  • cool and coarse grind

  • Add oil  to a heavy-bottomed wide pan and heat 

  • Furthermore add fennel seeds, curry leaves, and red chilli; roast

  • Add garlic and onion; cook till they turn translucent

  • furthermore, add  salt; mix well

  • add coarse ground masala; mix 

  • furthermore add soya chunks, water, and sesame oil; turn down to the lowest flame

 

  • cook for 3 minutes

  • finally, add pepper powder for extra spice. Turn off and serve
