    Elaneer Payasam is a quick and easy no-cook payasam that is perfect for summer. Whether for a get-together or a treat to yourself, this tender coconut ice apple payasam is a must-try.

    Coconut milk

    For this payasam, always extract fresh coconut milk instead of canned coconut milk. Freshly extracted milk gives the best taste. if you don't like coconut milk flavor, boil regular milk; cool, then use.

    First or second extraction of coconut milk?

    The first extraction gives the best taste. You can add a little water and extract again, but avoid very diluted milk as it will alter the taste.

    Can I use white sugar for nungu elaneer kheer?

    Yes, you can use any sugar of your choice.  In that case, melt the sugar, then prepare payasam.

    Can I cook payasam?

    It is not required, but you can cook if you add sugar. Cook with regular milk and avoid boiling coconut milk. For richness and thickness, you can add almonds or nuts of your choice.

    ice apple is juicy and super soft. Peel and finely chop; then use. Always add ice apple to the cool payasam.

    Coconut water

    Preferably use sweet coconut water, else increase condensed milk. Fresh coconut water gives the best taste, but you can use tetra pack ones according to availability.

    Tender coconut

    If you are using fresh coconut water, don't miss the fresh tender coconut flesh for the payasam. It should be super soft. Else, the payasam texture and taste might vary,

    Condensed milk

    The quantity depends on the sweetness of the coconut water. Add in batches and taste before adding more

    Serving suggestion

    Always refrigerate the payasam for at least an hour before serving. Nungu Elaneer Payasam tastes best if finished within a day. Since we didn't cook, I wouldn't recommend storing it for a longer time.

    Ingredients

    3/4 cup of thin coconut milk

    1+1/4 cup tender coconut

    Pinch of Cardamom powder

    5 ice apples, peeled and finely chopped

    Condensed milk according to taste

    How to make elaneer payasam with step-by-step pictures

    • First, combine all the mentioned ingredients except condensed milk

    • Add condensed milk gradually and check taste

    • Refrigerate for at least an hour and serve
