Why Thai coconut milk for inipu Thengai paal?
Traditional we grind coconut and water; extract milk and prepare Sweet coconut milk. I used to do this until I moved to US. Here I generally buy frozen coconut and it takes time to thaw and then extract process. That's when thai coconut milk comes handy. Super quick and no compromise in taste
Can I use thin coconut milk?
Yes in that case avoid water. I generally buy Thai thick coconut milk from Costco. It comes handy and makes the best sweet coconut milk for Appam.
Can I Use jaggery?
Yes you can sugar or jaggery. If you are going to use jaggery, prepare jaggery water; filter then add coconut milk else coconut milk might curdle
Does if taste like Aadi paal?
During Aadi month we prepare a payasam with coconut milk and call it Aadi paal | Aadi thengai paal, I like it. Having a sweet tooth I add extra sweetness to my thenga paal and it tastes like thengai paal. You can reduce the sugar according to your sweetness

Ingredients
- 1 can thick coconut milk
- 1/4 cup water
- 3 tablespoon sugar adjust according to your sweetness
- 1/4 teaspoon cardamom powder
Instructions
- Add all the ingredients into a microwave-safe bowl
- Microwave for 2 minutes; Mix well and instant coconut milk is ready
