Bhindi Masala | Okra Masala

 Flavorful bhindi masala tastes yum with chappati/rice. Curry can be prepared in less than 30 minutes.

 Hubby likes Okra very much and now it is my son’s favorite too. All these years I have been preparing a version of bhindi masala with onion- tomato base for chappati.

Recently we started liking a version of Bhindi masala served in our area Indian restaurant. It is a Andhra restaurant. They add peanut and coconut to the curry and we all love this version more.

I try to recreate that Bhindi masala based on the ingredients I have in home and also based on the flavors I could taste in curry.

 Bhindi Masala

Preparation Time : 10 min | Cooking Time : 30 mins | Serves : 3

Recipe Category: Side dish

Ingredients:

Okra – 14-15

Onion – 1 big, finely chopped

Garlic – 2 finely chopped

Ginger powder – 1/2 tsp 

Kitchen king Masala powder- 1 tsp

Kashmiri chilli  powder – 1 tsp

Coriander powder – 1/2 tsp

Cumin powder – 1/4 tsp

Curd / yogurt – 1/2 tbsp 

Turmeric powder – 1/8 tsp

peanut – 3 tbsp

Coriander leaves – as needed to garnish

Coconut – 1/4 cup

Salt – as needed

Fennel seed – 1/2 tsp

poppy seed – 1/4 tsp

Coconut oil – 1 tbsp

Method:

  • Add 1/2 tbsp of oil, spread the oil all through the pan and sauté the okra
  • Add curd and salt and cook till they become slightly crispy. 


  • Add remaining oil to another pan. When the oil is hot add fennel seed, poppy seed, clove and bay leaves. Add onions, garlic and little salt; sauté  till onions are translucent 
  • Add peanut, all the masala powder and remaining salt, pinch of sugar and cook 4-5 mins

  • Add the sautéd  okra and cook for 3-5 minutes. Add Coconut give a quick sauté and switch off

Notes

If you need Bhindi masala as a gravy, add the required amount of water.
To get crispy okra, wipe the okra dry before cooking. If you do not have time to wipe it dry,

    Yum, they look fantastic. Your notes are useful too. It’s true, the okra we get outside India turn out mushy if not dried.

    Mmm, this looks so great!
    I have only used okra when I made a lovelt Prawn and okra gumbo, but I can imagine it works really well in this Indian dish too ^ ^ They cook down so well and almost melt into the dish 🙂 I hope you have a great weekend! x
