Lunch box recipe – broccoli masala rice

Easy and tasty broccoli satham is a popular variety rice dish from South Indian cuisine. With cooked rice, flavorful rice can be prepared in 10 minutes with South Indian flavors. It is popularly known as kudai milaga sadham in Tamil. masala powder gives amazing flavor to the rice

CAN I USE LEFTOVER RICE FOR capsicum VARIETY RICE?

yes, it is one perfect way to finish leftover rice/ cold rice. If you are using leftover rice make sure you keep the rice at room temperature for some time. Warm the rice, spread the rice on a plate then use it. 

FLUFFY RICE

If you are making Kalandha sadham with freshly cooked rice make sure you spread the rice on a plate till the steam goes off. I generally add a few drops of oil while cooking rice as it helps fluffy rice. You can also add sesame oil while cooling the rice.

WHAT KIND OF RICE SHOULD I USE?

I generally use Sona masoori rice rice. You can also use basmati rice/ raw rice / brown rice/hand point rice/millet. Cook the rice well but not mushy. Avoid al dente cooking for better digestion.

Can I skip the ghee

Ghee is optional but gives amazing flavor so I would highly recommend

VARIETY RICE RECIPES IN TMF

Ingredients 

To steam

100 grams broccoli 

Pulao

1 tbsp ghee

8 cashews 

1/2 cup onion

2 green chilli, deseeded

2 garlic

1/4 tsp turmeric powder

1 tsp gram masala

1/4 tsp pepper powder

1 tsp Kitchen King masala

required salt

1/2 tsp lemon juice

3 cups sona masoori rice, cooked

1/2 tsp ghee

How to make broccoli rice with step-by-step pictures 

  • First, spread the cooked rice on a wide plate. Add sesame oil and fluffy
  • Boil water and place the steamer

  • Add broccoli; spread and steam cook for 5 minutes

  • Drain the water

  • Add ghee to a wide pan and heat

  • When the ghee turns hot add cashews and roast golden brown

  • Keep aside
  • Add onion, garlic, and chilli; saute till onion turns translucent

  • Add turmeric powder, garam masala, pepper powder, and kitchen King masala; mix well and saute for 2 minutes

  • Furthermore, add salt; mix well

  • add broccoli and saute for 1 minute

  • Furthermore, add rice and mix well

  • Turn off the stove
  • Add lemon juice and roasted cashew; mix well

  • finally, add ghee; mix well
