cauliflower malli
cauliflower marinated in yogurt - coriander turns so delicious. I have used less oil and made it as a side for rice. Instead, you can add extra rice flour and corn flour; and deep fry to make tasty Malli cauliflower appetizers.
Tips to note
- I recommend trimming the thick stalk and cutting small
- Always soak them well till they turn soft
- Drain the water completely
- make sure the curd is thick without whey separated
Should I parboil cauliflower?
If you are cutting the cauliflower small without thick stalk no need to parboil. soak till soft press. alternatively, you can parboil and drain the water
Should I add Water for marination?
No, ground coriander yogurt is enough for the marination avoid water.
Spice mix
For tangy flavor use chaat masala. You can use tikka masala or Add any flavor of your choice. You can add garam masala so any masala of your choice
Can I skip marination?
Marinating makes the cauliflower flavorful so I would recommend it. You can marinate for a longer time but at least for 30 minutes
Can I make them ahead of serving time?
Since we don't deep fry I prefer to make them just before serving
Can I add the watery marination while cooking
if you are cooking in the pan, you can use it. If you are deep frying discard the water then add extra flour

250 gram cauliflower
Required salt
1/4 teaspoon turmeric powder
2 tablespoon curd
10 g coriander
1 +1/2 tablespoon Oil
Curry leaves few
1 small onion
ginger
1 garlic
How to make cauliflower malli with step-by-step pictures
- First, add cauliflower to a wide vessel
- Furthermore, add hot water and soak; till soft press
- Transfer to a colander and drain the water completely
- Place the cauliflower on a wide vessel
- add coriander leaves, salt, curd, turmeric powder, small onion, ginger, garlic and 1 tablespoon of curd to a mixie jar; grind
- Furthermore add curd; grind again and transfer
- Marinate for at least 30 minutes
- Add oil to a heavy-bottomed wide pan and heat
- Furthermore, add marinated cauliflower; mix well
- cover and cook for 2 minutes
- mix well and repeat till cauliflower turns soft-press
- add curry leaves; mix well and cook till moisture evaporates
- finally, add rice flour and corn flour; mix well and cook till cauliflower turns to your desired texture
