Should I saute coconut

no this version is prepared with raw coconut. If you saute coconut, the flavor will vary

Can I use mortar and pestle instead

Yes, you can grind in a mixie or use mortar and pestle. Flavor will vary accordingly

softened tamarind

I would recommend using soft tamarind for easy grinding. If tamarind is hard, microwave it or soak it in very little water and use it. You can also use 1/2 tsp of tamarind paste instead of tamarind.

Shelf life?
