WHAT KIND OF DAL CAN I USE FOR north Indian style khichdi ?
I have used moong dal instead you can use green gram dal, toor dal, or any dal of your choice.
Can I skip soaking?
soaking is optional but it helps for mushy and perfect cooking. If you are planning to skip soaking, cook for additional whistles.
can I pressure cook onion, and tomato?
yes, but for the best restaurant-style palak khichdi i would recommend cooking this way.

Can I skip the spinach?
yes, you can add vegetables of your choice and prepare khichdi. if you are using other vegetables cook them then add. avoid cooking spinach for longtime
Can I pack it for lunch box?
Yes, use the mentioned quantity of water and pack khichdi warm. It stays perfect for school lunch.

Soak
moong dal 1/2 cup
rice 1/2 cup
pressure cook
1/2 teaspoon turmeric powder
1 teaspoon ghee
to temper
1 tablespoon ghee
asafoetida
1 teaspoon cumin seeds
bay leaf 1
moong dal khichdi
1/2 cup onion
1 tablespoon ginger garlic paste
1/2 cup tomato
1 teaspoon garam masala
1/2 teaspoon coriander powder
required salt
1/2 tablespoon kashmiri chilli powder
2 cups water
1 +1/2 cup spinach
pinch of jaggery
1 teaspoon ghee
how to make khichdi with step by step pictures
Pressure Cook dal + rice

Firstly wash rice and dal
- Soak with 3 cups of hot water for 20 minutes

Add turmeric powder, and ghee; pressure cook for 6 whistles or cook in rice mode using the instant pot; do natural pressure release
Cook spinach dal khichdi

Add ghee to the pan and heat on medium flame

Furthermore add cumin seeds, bay leaf and asafoetida; splutter

Add 1 tablespoon of ginger garlic and give a quick mix

Furthermore add onion; saute till onions turn translucent

Add tomatoes; mix well and cook till tomatoes turn slightly mushy

Furthermore, add coriander powder, Kashmiri chilli powder, gram masala salt; mix well and cook for 3 minutes
