Palkova
Palgova is a tasty Indian sweet prepared with whole fat milk. This tasty sweet can be prepared with just two ingredients, therattipal tastes so yummy.
Milk for palkova
Always use full-fat fresh milk. Don't use skimmed milk. Boil the milk at a very low temperature and continue cooking until the process is complete. This requires constant stirring to avoid burning or sticking to the bottom. If the milk is in the fridge, always bring it to room temperature before preparing palkova
Sugar
For Srivilliputhur Palkova always use white sugar. You can use jaggery or country sugar. Adding sugar at the right time gives you the perfect color for the Palkova. If you add it too early, the sugar dissolves and you will end up getting slightly yellowish to brownish Palkova.
QUICK TIPS AND NOTES
- Always use heavy bottomed wide pan for milk sweets, this ensures that the bottom isn’t burned and gives you an equal distribution of heat from the flame
- Use only high-fat milk for a creamy texture. Don’t add water while boiling
- Milk should be at room temperature while boiling, this avoids curdling of milk
- Sugar should be added only after the milk turns creamy and reduced by more than half. This gives you the white color to the dish, else slight color change may be visible.
- Always Stir and scrape the sides Keep the flame low and keep stirring till it gets reduced.
- Palkova thickens over time so turn off the stove before it comes to serving consistency. otherwise, it becomes chewy and hard when it cools

How to make Srivilliputhur Palkova with step-by-step pictures
- In a wide heavy bottomed pan add milk and let it boil
- Cook on low flame keep stirring and scrape the sides regularly
- make sure it is not burnt, and keep doing it every time the milk starts boiling
- At one stage milk reduces to 1/3 quantity and becomes like a cream
- Add the sugar around that time and keep stirring
- cook till the sugar melts well and therattipal becomes a whole mass
- Turn off immediately and transfer to Another dish to prevent further cooking
