I used idli rice. You can use any rice, millet, or quinoa of choice
SHOULD I GRIND rava?
Yes, it gives perfect texture for the dosa, so don't skip it. Always soak first for 20 minutes, then grind.
RICE FOR INSTANT DOSAI?
I have used cooked sona masoori rice. You can use any variety of rice. If you are using basmati rice, add extra.
Should I soak the coconut?
It is optional, but soaking helps for a smooth batter.

Since we used cucumber, I would recommend finishing the batter in 2 days
CONSISTENCY OF dosai batter?
Water content in cucumber makes the batter slightly watery, which helps for spongy dosai.

For instant Dosai uses a pinch of baking soda and makes dosai immediately

Ingredients
1 cup Idli rice
1/4 coconut
1/2 cup cooked rice
250 g mini cucumber
1/2 cup water
Ginger
Green chilli
1/2 teaspoon Cumin seeds
Sesame oil
How to make cucumber Dosai with step-by-step pictures
- First wash idli Rice
- Add water, cooked rice, ginger powder, coriander, green chilli, and coconut; soak for 3 hours
- Add mini cucumber and salt; grind the batter
- Add cumin seeds; mix well and ferment overnight
- Mix the batter
- Heat griddle
- Add a ladle full of batter; make a thick dosai
- Drizzle oil and cook both sides
- Serve hot
