    If you have a kid who is picky about vegetables, this pasta is perfect.

    Lunch box recipe - beetroot  pasta

    Easy and tasty beet pasta is perfect for a packed lunch. Perfect for school lunchbox.

    Pasta for creamy beet sauce pasta

    You can use any variety of pasta. Elbow,  shell, Rigatoni, Penne, etc.

    Will it taste good without cream/butter

    Yes, almonds, beets, along with paneer turn creamy

    Cheese for vegetable pasta

    Based on my kid's taste I have used mozzarella. You can also use cheddar, Gouda, Gruyère, Fontina and Parmesan, etc.

    Milk for pink pasta

    Milk gives richness and the perfect flavor to the pink beets pasta. I would highly recommend it. If you are skipping milk, add little cream

    How long should I cook pasta in the sauce 

    Almonds, beets and paneer help pasta thicken over time. Avoid overcooking.

    Can I use butter instead of oil

    Yes, you can use butter

    Ingredients

    Pressure cook pasta

    150 gram pasta

    300 ml water

    Salt

    Italian seasoning

    1/2 teaspoon olive oil

    Pressure cook beetroot

    3/4 cup beetroot

    2 tablespoon onion

    Red chilli flakes

    2 garlic

    Italian seasoning

    1/4 cup water

    Pasta

    25 g paneer

    1 cup milk

    1 tablespoon cheese

    Salt

    Italian seasoning

    how to make beet pasta with step by step pictures

    • First, add pasta, water, Italian seasoning, salt, olive oil in a separator

    • Add beets, onion, garlic, Italian seasoning, chilli flakes, almonds, and water in another separator

    • Pressure cook for 2 whistles
    • Mix pasta well and keep covered
    • Cool beets and add paneer

    • grind with 1/2 cup of milk

    • add cooked pasta along with water , pasta sauce, Italian seasoning , salt and 1/2  of milk; cook for 5 minutes

    • add cheese and turn off the stove
