    Almond Butter Muffin | Oats muffin

    Oats almond butter muffins are perfect for breakfast -  with mild  sweetness these are healthy treat. Fiber rich oats paired with almond butter makes it perfect for toddler snacks.These are Eggless muffins.

    Breakfast these days are going super crazy in our house. Jagadish leaves so early for work. He prefers packing the breakfast rather than eating at home. Many tiffin items don't stay good if eaten after an hour or two. Moreover I find it super difficult to wake up early morning for preparing breakfast.

    I started exploring make-ahead breakfast recipes. It saves lot time for me during morning. If I bake something previous night and pack him I need not wake up early for preparing breakfast 😁He can just take it and heat it while eating. Above all it's tension free morning.

    These days at least twice a day we have oats for breakfast. Vishvak also likes oatmeal. When I thought about make ahead breakfast, oats was my first choice. Fiber rich start for the healthy day. Main ingredient check😆

    One of my friends recently relocated out of Seattle, and she gave some kitchen syrup, sauce which she couldn't take with her. Vishvak like pancakes with cream cheese. After trying the maple syrup she gave me, he started liking it. I thought why not use his favorite maple syrup as sugar substitute. Sugar part solved.

    Nuts are something Vishvak is not fond of. I always try to add it in the food I make. Had a jar of Almond butter in my pantry. Now its Time to say hello to almond butter. If your kids like oats taste and you are looking for filling healthy muffins, here is the treat. I market these muffins to Vishvak by adding a maple syrup/chocolate layer over the muffin😂
    One more specialty about this muffin is the simplicity to work on. You can use spoon/ladle to mix. No need for whisk or electric mixer.

    Ingredients

    Dry ingredients

    • Oats flour - 2 cups
    • Baking powder - 3 tsp
    • Salt - pinch

    Wet ingredients

    • Almond butter - 1/3 cup
    • Maple syrup - 1/3 tablespoon + 1 tsp Adjust according to your sweetness
    • Oil - 1/4 cup
    • Almond extract - 1 tsp
    • Milk - 1 cup + 1/3 cup

    Garnish:

    • Roasted Almond Flakes - few

    Instructions

    • Preheat oven to 350 F. Line the muffin tray with muffin cups and grease it with baking spray
    • In a wide bowl add all the dry ingredients and mix well
    • In a separate bowl combine oil and almond butter. Mix well till the butter combines well with oil
    • Add the milk and maple syrup to it and mix everything together
    • Pour the batter into the muffin cups and bake for about 12 minutes, or until toothpick inserted comes out clean. Allow to it cool and enjoy

    Notes

    1. Peanut butter, cashew butter can also be used instead of alms butter
    2.  Choco chips, raisins, cranberry, chopped dates can be added for extra flavour. If you are adding any of these add it towards the end
    3.  Vanilla extract can be used instead of almond extract
    4.  Quick oats can also be used instead of old fashion
    5.  One teaspoon of cocoa powder can be added for chocolate lovers
    6. If you thing the muffin is less sweet, drizzle chocolate syrup/maple syrup
    7. Pancake syrup/honey/ jaggery syrup/sugar syrup/Agave nectar/corn syrup trip can Ben used instead of maple syrup
