Aval payasam

Ingredients

  • ¼ cup thick flattened rice | aval | poha
  • ¼ cup hot water
  • 1 tablespoon ghee
  • ¼ cup sugar
  • 6 Cashews roughly chopped
  • 1 + ½ cup whole fat milk hot
  • teaspoon cardamom powder
  • Pinch of salt

Instructions

  • Measure and take ¼ cup of poha in a colander and wash it twice and filter
  • Transfer the washed poha into a bowl and add hot water
  • Cover and soak for 5 minutes
  • Add 1 tablespoon of ghee to a heavy-bottomed pan and heat in low - medium heat
  • When ghee is hot add cashews and sugar and saute well
  • Roast till cashews turn golden brown and simmer on the stove
  • Gradually add hot milk, soaked aval, cardamom powder, and a pinch of salt
  • Turn to medium flame and boil the payasam for 6 minutes, mix well in between
  • Tasty Aval paal payasam is ready

Notes

  1. If you are going to use thin flattened rice flakes, avoid soaking
  2. If you are going to use red
    flattened rice flakes, soak for additional time
  3. If you are going to use white sugar,
    do not sauté cashews with sugar
  4. Adjust sugar quantity according to your taste.You can also use jaggery instead
  5. You can use condensed milk instead of sugar

What is Aval Payasam?

Be it a festival such as Gokulashtami | Navratri | Ganesh Chaturth| Onam, etc., or quick Indian dessert for sweet craving or sweet for sudden guest we need some simple Indian milk-based dessert recipe. Flattened rice | Rice flakes payasam is a popular south Indian pudding or dessert recipe. In Tamil Nadu it is popular as Aval payasam, In Andhra Pradesh, it is called Atukula Payasam, in Karnataka, it is popular as Avalakki Payasa. Cane sugar-based quick dessert is not only healthy but also the best payasam recipe.

What kind of Poha should I use for Poha Kheer?

I prefer using Thick flattened flakes for the kheer recipe. Avoid paper poha as it might not hold shape in the payasam. If you are using thin poha avoid soaking them. Boil the poha in milk and prepare payasam.

Can I use regular sugar or jaggery instead of Cane sugar?

I have used demerara cane sugar for making Aval paal payasam. Yes, you can use white sugar or jaggery instead of Cane sugar. demerara cane sugar crystals are big so I have sautéed cashews and sugar together till cashews turn brown. White sugar/ brown sugar/jaggery powder might caramelize soon so if you are planning to make caramel payasam, sauté cashew and make separately.

Can I use low-fat milk for preparing Poha kheer?

I would recommend whole-fat milk for the Kheer recipe. It gives richness to the Aval paal payasam. If you are using 2 % milk avoid soaking Aval in water. Use 1 +¾ cup of milk and cook aval in milk. Avoid 1% milk for payasam. https://youtube.com/playlist?list=PL3zYDDQHDMSssyx_uCMtLLfz-zJJXJTnN

Can I use condensed milk for Rice flakes payasam?

 Can I make vegan Poha kheer?

Yes, you can use coconut milk instead of milk and prepare Payasam like Chana dal payasam

How long does Atukula Payasam last?

if it is stored in the refrigerator, payasam stays good for 2 days

  1. Can I reduce the amount of milk if I wanted a more pudding like consistency? It seems like all kheer is made with a large excess of milk and only about a quarter cup of rice or poha.
