Channa masala is a tasty one-pot recipe prepared with channa and onion- tomato base. It can be prepared quickly using a pressure cooker or Instant Pot.

Chana masala in Instant pot

One-pot chana masala is so flavorful and a great beginner-friendly recipe. Be it weekday food or make-ahead curry for a dinner party- IP Chole masala is a great option.

Should I soak chana?

 Soaking chana overnight or for 12 hours helps for perfect chickpea cooking.  Even without soaking, you can cook chana masala for additional time in IP and it will be cooked but soaked chickpea is good for digestion.  

is it ok to add lemon juice to hot masala?

Yes, I always add lemon juice after turning off IP. Though it is hot it won’t affect the masala taste

Can I cook pressure cooker chana masala?

Yes follow all the steps and pressure cook for 7-8 whistles 

How to alter watery chana

Cook for additional time or mash a few cooked chana and boil the curry

Ingredients

soak

  • 1 cup Chana | chickpea
  • enough water to soak

To cook

  • 3 tbsp oil
  • 1 big onion
  • 2 big tomatoes I used vine tomato
  • 1 tbsp ginger garlic paste
  • 1/2 tbsp Kashmiri chilli powder heaped
  • 1/2 tbsp garam masala
  • 1 tbsp chole masala
  • required salt
  • pinch of sugar
  • 3 cups water
  • Chana masala
  • 1 tsp garam masala

Finishing touch

  • coriander leaves
  • lemon as required

Instructions

  • Soak Chana overnight
  • Turn on IP in saute mode and add oil
  • When the display shows hot add bay leaf, clove, cardamom, and cinnamon and give quick saute
  • Add onion and ginger-garlic paste; saute till onion turns translucent
  • Furthermore, add tomatoes and mix well
  • Add Kashmiri chilli powder, garam masala, chole masala, and required salt; mix well and cook for 3 minutes
  • Furthermore, add salt and mix well
  • Add the soaked Chickpea and mix well
  • Add required salt, water, and pinch of sugar; mix well
  • Press “cancel”
  • Turn the Instant pot to manual mode. Cook for 35 minutes at a high temperature. Do NPR
  • Turn on IP in “saute” mode
  • Add garam masala, salt if required, and boil for 15 minutes
  • Turn off IP and add coriander leaves and lemon juice; mix well

Notes

  1. I soaked Chana overnight instead you can also soak in hot water for 4 hours
  2. YOu can pressure cook for 7-8 whistles and do natural pressure release
  3. Lemon can be squeezed towards the end for the tangy flavor. You can use 1/4 tsp of amchur powder or 1/2 tbsp of curd instead of lemon juice
  4. I directly cooked this gravy  in an Instant pot, instead, you can also cook channa and masala separately, and finally add cooked chana to the masala
  5. Water depends upon the chana. If you think gravy is watery  boil for additional time or smash a few chana

How to make a Chana masala with step by step pictures

    I am so happy to see this dish!! I have been sampling pre-made channa masala at my 2 favorite grocery stores here and love it. I keep saying that I am going to make it myself – a pressure cooker method is WONDERFUL!! I am going to try it- Thank you!!

    The quick and easy way is the way to go on a week day. I often do something similar. I will try the coconut + fried dal way soon. I like that combination by itself anyway.
