CAN I SKIP COCONUT?

Yes, grinding coconut is optional but coconut gives the best flavor to kathirikka sadham so I would highly recommend that.

AN I USE COCONUT MILK INSTEAD OF COCONUT?

Yes in that case adjust the water accordingly.

CAN I ADD BIRYANI MASALA

Yes in that case adjust other masala powders accordingly. 

RICE FOR  PULAO

I have used basmati rice. You can use any variety of rice according to your choice. Adjust water accordingly.

 

 

NON-SOUR THICK CURD

Always use non-sour hung curd for this recipe. I prefer using homemade thick curd as it gives perfect texture. You can also use plain yogurt or sour cream. avoid curd with whey water

 

SHOULD I SOAK RICE?

I soaked the rice for 20 minutes. adjust the soaking time according to the rice variety you use.

 

CAN I use GHEE FOR COOKING?

Peanut oil gives amazing flavor to the biryani so I use prefer using it. you can add ghee.

SHOULD I ADD MORE TOMATOES?

 I added ⅓ cup of tomatoes. If you are adding extra curd, reduce tomatoes accordingly

SIDE DISH FOR BIRYANI

Biryani goes well with raita varieties kathirikai chops, plain kurma,  mirchi salan, and raita

CAN I COOK COOKER brinjal BIRYANI IN THE INSTANT POT?

Yes, for the instant pot version avoid soaking the rice. cook for 5 minutes and do natural pressure release.

1 cup basmati rice

8 brinjal 

To roast and grind

½ teaspoon fennel seeds

cinnamon

½ teaspoon poppy seeds

cardamom

½ teaspoon sesame seeds

2 tablespoon coconut 

½ teaspoon pepper

3 garlic

½ teaspoon coriander seeds

ginger

½ teaspoon cumin seeds

Brinjal pulao

¾ cup onion

⅓ cup tomato

required salt

1 teaspoon chilli powder

¼ teaspoon turmeric powder

bay leaf

2 green chilli

1 tablespoon curd

required salt

⅛ teaspoon sesame oil

how to make gutti vankaya pulao with step-by-step pictures

  • First, wash and soak rice for 2o minutes

  • Soak brinjal in water. sprinkle salt and soak for 20 minutes

  • saute cinnamon, cardamom, fennel seeds, poppy seeds, sesame seeds, pepper, and cumin seeds; mix well

  • furthermore add coconut, ginger, and garlic; saute till they turn aromatic and change color

  • Cool and grind with little water
  • Add oil and heat

  • Furthermore, add bay leaf, brinjal, and onion; saute till the raw smell goes off and the brinjal change color

  • add tomato, turmeric powder, and salt; saute till tomatoes turn slightly mushy

  • Furthermore, add the ground masala and curd; saute for 30 seconds

  • Add  chilli powder; give a quick mix

  • Furthermore, add rice and mix well

  • add water; mix well and boil

  • Finally, add sesame oil and pressure cook for 2 whistles

  • Do natural pressure release and fluff the rice
